Summer Catfish Salad
•1-1/2 pounds Delta Pride catfish fillets, broiled or poached and flaked*
•1/2 cup chopped celery
•1/2 cup chopped green onions
•1 (8 oz.) can sliced water chestnuts
•1-1/2 cups mayonnaise
•2 Tablespoons lemon juice
•1/4 teaspoon lemon pepper
•1/2 teaspoon garlic salt
•Paprika
•Bibb lettuce leaves
Combine all ingredients except paprika and lettuce; mix thoroughly. Place on lettuce leaves and sprinkle with paprika.
Yield: 3-4 servings.
*To poach catfish fillets, place 2 fillets in microwave dish and cover with 1/2 cup white wine or 1/2 cup water and 1 tablespoon lemon juice. Cover with waxed paper and cook at HIGH (100% power) for 5-7 minutes. Turn fillets over after half of cooking time. Repeat with other two fillets. Cool slightly and flake for use in recipe.
