Grilled Chipotle Barbecue Pork Chops with Molasses Rum Glaze

Glaze:

* 1 tablespoon extra-virgin olive oil
* ½ small yellow onion, finely chopped
* 1½ teaspoons minced garlic
* 1 tablespoon finely minced fresh ginger
* 2 tablespoons dark rum
* ½ cup molasses
* 1¼ cups bottled orange juice with pulp (such as Tropicana®)
* Salt and pepper, to taste


Chops:

* 4 (8-ounce) pork loin chops
* Extra-virgin olive oil, as needed
* 4 teaspoons Bruno's Smoked BBQ Chipotle Seasoning (or your favorite barbecue seasoning)

1. For Glaze: Heat a small saucepan over medium-high heat; add oil and heat through. Add onion, garlic and ginger, and cook until onions are tender, about 3 minutes. Add rum, and reduce by half.
2. Add molasses and orange juice, then taste and adjust seasoning as needed with salt. Continue cooking glaze until reduced to about ¾ cup, about 10 minutes; set aside.
3. For Chops: Preheat grill to medium-high; clean and oil grates to prevent sticking. Brush chops with oil, and season both sides with barbecue seasoning.
4. Grill until nicely seared on one side, about 5 to 6 minutes; flip chops over and cook to desired doneness, about 4 to 5 minutes more. Do not over-cook!
5. Remove chops from grill and let rest for 3 to 4 minutes; drizzle with Molasses-Rum Glaze, and serve immediately.
