Corn Dip & Chips

INGREDIENTS

* 4-6 ears Corn, cooked
* 1 Bell Pepper, finely chopped
* 1 can Rotel Tomatoes
* 1 bunch fresh Green Onions, chopped
* 2 cups shredded Cheddar cheese
* 16 ounces Sour Cream
* 1 ½ cups mayonnaise

Cut kernels off cooked corn ears. Mix all ingredients together and chill several hours or overnight. Serve with corn chips.

If fresh corn is unavailable, you can substitute with canned (drained) sweet corn.
