Catfish Kittrell

INGREDIENTS

Kittrell Sauce:

* 1 cup of Crawfish tails
* 1 tablespoon of Butter
* 1 tablespoon self-rising Flour
* 1 tablespoon each of red, yellow, and green Bell
Pepper, finely chopped
* ¼ cup of Sweet Onion, finely chopped
* 1 teaspoon minced Garlic
* 1 teaspoon smoked Paprika
* ½ teaspoon Kosher Salt

Add butter and all other ingredients. Sauté vegetables until tender. Add 1 Cup Heavy Cream to sautéed vegetables. Whisk while bringing sauce to a gentle boil and add 1 Cup of Crawfish Tails. Gently stir and remove from heat.

Blackened Catfish:
INGREDIENTS

* 4 Filets of Mississippi farm-raised Catfish
* 1 tablespoon of extra-virgin Olive Oil
* Blackening seasoning

Generously coat top of filets with blackening seasoning. Add olive oil to a very hot skillet. Cook 4 minutes on each side. Drizzle blackened catfish filets with Kittrell Sauce and garnish with green onions.
